The 2020 holiday season will most definitely look different than in past years. Thanks to limited gatherings due to COVID-19, family feasts and Friendsgiving parties will more than likely be limited to a few people.
There’s no reason to skimp on dinner, however, but you may not need that 19-pound turkey this year. If a small gathering is in your Thanksgiving future, why not eliminate the extra dishes, copious amounts of leftovers and the refrigerator space required to house all of the traditional prep required for a big dinner?
Instead, whip up a quick and easy (but still delicious) Thanksgiving feast for up to six people on two rimmed baking sheets in about an hour. Knock out a batch of cranberry sauce up to a week ahead, and make one dessert instead of three separate pies but still get the flavors you crave.
This is proof that it is possible to downsize the biggest food holiday out there without sacrificing favorites.
Sheet-pan Thanksgiving dinner
Set bread cubes on a tray for a day before cooking so they get a little stale — or toast them in the oven at 425 degrees for 10 minutes.
Softened butter, for the baking sheets
FOR THE STUFFING/DRESSING
6 tablespoons unsalted butter
1 medium sweet onion, diced
2 celery ribs, diced
3 tablespoons chopped fresh sage
1¼ cups chicken stock
1 large egg
Kosher salt and freshly ground black pepper
10 cups day-old sourdough, brioche or other hearty white bread cubes
FOR THE TURKEY
Kosher salt and freshly ground black pepper, to taste
6- to 7-pound whole turkey breast, breast halves removed from the bone with skin attached
2 tablespoons unsalted butter, melted
FOR THE BRUSSELS SPROUTS
1½ pounds Brussels sprouts, halved
1½ tablespoons olive oil
1 tablespoon reduced sodium soy sauce
1 tablespoon honey
FOR THE SWEET POTATOES
6 small to medium sweet potatoes
3 tablespoons unsalted butter, cubed
½ cup candied pecans, chopped
1½ cups mini marshmallows
Preheat oven to 425 degrees. Lightly coat two rimmed baking sheets with softened butter.
FOR THE STUFFING/DRESSING:
1. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add onion and celery, and cook, stirring occasionally, until tender, about 5 minutes. Stir in sage.
2. In a large bowl, whisk together chicken broth, egg, 1 teaspoon salt and ½ teaspoon pepper. Add the bread cubes and the vegetable mixture and stir to combine. Transfer the stuffing mixture to one-half of a prepared sheet pan, spreading it in an even layer but not packing it down. Melt the remaining 2 tablespoons butter and drizzle over the stuffing.
FOR THE TURKEY: Generously sprinkle the turkey breasts on both sides with salt and pepper and put them skin-side up on the other half of the sheet pan next to the stuffing. Brush the skin with the 2 tablespoons of melted butter.
FOR THE BRUSSELS SPROUTS: Place Brussels sprouts in a single layer onto one side of the second prepared baking sheet. Add olive oil, soy sauce and honey and toss gently to combine.
FOR THE SWEET POTATOES: Prick the sweet potatoes all over with a fork and arrange them on the other half of the sheet pan next to the Brussels sprouts.
1. Place sheet pans into oven, on separate racks, and bake for 30 minutes. Remove from oven; stir Brussels sprouts and rotate sheet pans onto different racks. Continue to bake until Brussels sprouts are lightly browned, an additional 20 minutes. Stir Brussels sprouts onto one side of the baking sheet.
2. Cut the potatoes down the center lengthwise, top with butter, pecans and marshmallows. Place into oven and bake until the marshmallows just start to brown, about 5 minutes.
3. If needed, continue cooking the turkey and stuffing pan until the turkey is completely cooked through, reaching an internal temperature of 165 degrees. Let rest 5 minutes before slicing. Serve immediately.
Cranberry sauce
Serves 6 to 8
This quick, no-frills version of a holiday classic involves five common ingredients and 15 minutes on the stove. I always make extra, to ensure enough for day-after turkey sandwiches.
2 (8-ounce) packages cranberries, fresh or frozen
1 orange, zested and juiced
¾ to 1 cup sugar
1 teaspoon ground cinnamon
¼ teaspoon freshly ground black pepper
1. Put all the ingredients into a saucepan. Stir in ½ cup water and bring to a simmer over medium heat.
2. Cook, stirring occasionally, until the cranberries burst and the sauce thickens, about 15 to 20 minutes. Cool and refrigerate until ready to serve.
Make ahead: Refrigerate up to a week or freeze for up to one month.
Marbled pumpkin cheesecake with pecan pie topping
Serves 10 to 12
This combines all of our favorite Thanksgiving desserts into one: cheesecake, pumpkin pie and pecan pie. Save the extra pumpkin puree to stir into your favorite hearty soup or chili.
Pumpkin cheesecake:
1½ cups crushed gingersnap cookies
½ cup finely chopped pecans
⅓ cup butter, melted
2 (8-ounce) packages cream cheese, softened
¾ cup white sugar, divided
1 teaspoon vanilla extract
3 large eggs
1 cup canned pumpkin
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pecan pie topping:
2 eggs beaten
¼ cup granulated sugar
¼ cup firmly packed dark brown sugar
2 tablespoons melted butter
⅓ cup dark corn syrup
1 teaspoon vanilla extract
½ teaspoon salt
1 cup coarsely chopped pecans
1. Preheat oven to 350 degrees. In a medium bowl, mix together the crushed gingersnap cookies, pecans and butter. Press into the bottom and about 1 inch up the sides of a 10-inch springform pan. Bake crust 10 minutes in the preheated oven. Set aside to cool.
2. In a medium bowl, mix together the cream cheese, ½ cup sugar and vanilla just until smooth. Mix in eggs one at a time, blending well after each. Set aside 1 cup of the mixture. Blend ¼ cup sugar, pumpkin, cinnamon and nutmeg into the remaining mixture.
3. Spread the pumpkin-flavored batter onto the crust and drop the plain batter by the spoonful onto the top. Swirl with a knife to create a marbled effect. Place pan in the freezer for 20 to 30 minutes to so the batter can firm up.
4. For the pecan pie topping, combine the eggs, sugars, melted butter, corn syrup, vanilla extract and salt in a bowl. Stir in pecans.
5. Remove cheesecake from freezer and carefully spoon the pecan layer over the pumpkin layer.
6. Bake until filling is set, about 55 minutes. Run a knife around the edge of the pan. Allow to cool before removing pan rim. Chill for at least 2 hours before serving.

Todd
Mr. Todd has stolen the hearts of many people here at the Tulsa SPCA. With a charming personality and gentle demeanor, he would make a great companion for a variety of people!
Although he can be startled by strangers if they move toward him too fast, he makes a quick recovery once they give him a minute to check them out. This is likely due to his history as he was found living as a backyard dog. This lack of exposure to the world means that Todd will need some time adjusting to living in a home environment, but we don't think he will be held back for very long. He has already proven himself confident enough to take the role of Office Dog here at the Tulsa SPCA, some of our staff report. He behaved wonderfully and simply relaxed at their side!
Todd is 3 years old and only 15 pounds! He has been neutered, microchipped, vaccinated and is current on parasite prevention. Todd is looking for a home without young children due to his caution towards quick movements. (8 years or older)

Dahlia
Dahlia was rescued by a StreetCats volunteer when the family who lived across the street from her moved and abandoned her. She loves kids and played with younger school age kids a lot. She is sweet, playful, loves human contact, can be a talker (especially in a car). She loves wet food. She has lived with another cat. She really wants to bond with a human who will give her lots of love.

This sweet face belongs to Chrissy, a 6-year-old chihuahua. She was very fearful when we first got her but has since come out of her shell. Chrissy’s favorite place to be is in your lap, and she loves to cuddle up next to you in bed. Toby
Grumpy was my name but I'm anything but, so my new name is Toby! I am as happy they come! My foster mom says I am the "goodest" boy! I love to be outside and play, but my favorite thing is treats. I'll do just about anything for a treat. I sit, lay down, come when called and I am learning how to shake hands. I even learned to go on daily runs with my person and didn’t trip them once! Mr. Heckles
My name is Mr. Heckles, but my friends just call me Heckles. I’m a lifer here at CARE, meaning I was born into the rescue! I’m 2½ years old and so ready to find my forever family. I’m a little quirky, but I don’t think that means I don’t deserve an understanding family of my own. In fact, I’m patiently waiting for them to find me. I’m a pretty big guy weighing in at 91 pounds, and I’m a Great Pyrenees mix! I know how to sit, lay down, crawl, shake and even sit pretty! I walk well on a martingale collar too. I get a little nervous around new people and new dogs, but I do warm up. I may be a big guy, but I just can’t help that I get nervous, and I hope that doesn’t deter you from wanting to give me a shot. With my size, sometimes things scare me. I’m house- and crate-trained, and I think I would do best with grownups and bigger kids. The little ones sometimes have loud voices that make me nervous. Moscato
Moscato aka Mosi is such a beautiful, sweet pup! She is a VERY young mother at only 9 months and has been a good little mama, even though she was a baby having babies. She loves people and has actually preferred her foster dad over mom! Mosi enjoys playing fetch and squeaky toys better watch out. She came from a hoarder situation so we did not expect her to handle being in a crate but she adapted very well. Mosi is only about 25 pounds, and we don't anticipate she will get much bigger. Little Mama
Little Mama is a blue tabby with white, and her estimated birthdate is 12/1/2013. Her right eye apparently had an issue in the past, but the eye is fine. She came in with two companions, but they have been adopted and are doing great in their new home. While she is shy, we think once she has a home of her own, she will adjust because when she was in a foster home before coming into StreetCats, she followed the lady all over the place. She would probably be best in a home with no dogs and no small children. She hangs out in a hidey house on top of the fridge in StreetCats, but we hope someone will give her a chance for a home of her own as she is a special lady.

I am Wallace! I go by Wally though because Wallace sounds so sophisticated. I am 2 years old and potty trained! That’s a plus right? I really enjoy nice long walks outside and I like the kiddos (I have a 6- and 15-year-old at home ... Yes, they’re mine and I love them). I like to be around my people, that’s not to say I’m bad when they leave, I just get kind of anxious when that happens. I’m working on it though every day because I’m such a good boy. Giana was dumped in a rural area and is so happy to have been rescued! She adores people and wants to be near them always. Millie
If you are looking for a senior cat who desperately needs a home, Millie is the “purrfect” cat for you. She is all white, weights 8.85 pounds and her estimated birthdate is 3/17/2005. She was adopted 3/24/2006 by a former StreetCats volunteer who recently died, so Millie came back to StreetCats because we always take back cats that were initially adopted from us when they lose their home. While she’s still adjusting to being in StreetCats, she’d much rather have a loving home or her own. Her former owner gave her lots of love and attention, which she’d love to have again. She shared her home with Tiny, who is also in StreetCats, but is on hold at this time before being available for adoption. Millie’s blood work showed she is still in great health and she also had a dental cleaning, along with updated vaccinations, when she was returned to us.

Hi! My name is Zero Suit Samus (or Samus for short), and I'm an energetic pitbull mix who needs some love. And I really mean that. I need a family who will cuddle with me because your penalty for not giving me cuddles is to hear the cry of my people. My foster dad says that based on my crying, I must have descended from pterodactyls, but that's silly because pterodactyls don't even like peanut butter. And I looove peanut butter. And treats. And strawberries. And watermelon. And anything, really. Honestly kid, if you give me your salad, I'll eat it. Don't want your broccoli? I'll take care of your problem. See that toy? It's in my stomach now. See that puke? Well, you can have your toy back.
Like all superdogs, I have an origin story: I ran across the highway and caused a 4-car pileup that I ended up underneath. It wasn’t my best choice, but it’s still a better love story than "Twilight." I have to take daily medication now, or else I have pretty severe seizures. But I like to think of my epilepsy as my unbridled superpower that the world just isn’t ready for yet.
I'm a Tulsa native, but I'm still not a fan of the Bermuda grass around here - I get allergies in the summer, so that's something you should know. Despite this, I still love running and rolling in the grass, and if you toss me a ball, I can jump and catch it in mid-air even when it's 6-feet high. I'm not exaggerating. (Pterodactyl dogs never exaggerate.) And would you mind spraying me with a hose once in a while? I love playing in water, especially when it's coming out of a tiny hose at jet-like speeds.
But if you have another dog in the home, then forget about it because I'm a single-dog dog. A lone wolf. A rebel. I will not share my toys, I will not share my food, and I will not share my family. I do just fine around other dogs in general, but once you introduce toys or food, then I get very territorial. Can we agree that I'll be your only one?
By the way, I love kids. I don't have these problems with other humans, so don't worry about bringing me home to your young ones. I am loyal to the bone. Don't believe me? Try going for a jog with me. I will keep pace with you the entire time, just running by your hip. Need me to lick the sweat off your face after an especially hot run? Baby, that's what I'm about. I'm a good dog. My foster family says so, too. I will take care of you if you let me. I'm eager to learn, I don't catch coronaviruses, and I'm housebroken. I won't poop in your Cheerios. Unless that's one of your commands, but why would it be? Don't want your Cheerios? Just let me have them instead.

Percy is a middle-aged girl who, along with her sister, was dumped at a local high-kill shelter after years of neglect and overbreeding. With the support of many, Percy and her sister were rescued by CARE Rescue. Unfortunately, her sister didn’t make it due to a cancerous mass. But Percy has received noninvasive medical treatment and is now just looking for a soft place to lay her head. Along with years of neglect, Percy is a bit overweight and is simply looking for a family who will treat her well. In only a few weeks, Percy has begun to show her true personality, and she is showing bursts of playfulness. But after a little bit of attention and activity, she is ready to go to a soft place to rest. If you are looking for a girl who isn’t looking for lots of activity, Percy will show you all the love a girl can. It is believed she is approximately 7 years old but still has lots of life. Carlos
Carlos is approximately 18 months old and don’t let his size mislead you. This boy is possibly the most “chill” dog you will ever meet. He rarely barks, loves other dogs and is the perfect gentleman with a smile that will melt your heart. Carlos loves to give hugs and kisses if you let him, but mostly, he is simply looking or a family to love and to be loved. Carlos is comfortable in a crate but doesn’t mind getting in the car if you want a buddy to tag along. He even walks great on a leash. Georgie
Meet Georgie! This young dane mix is a light 72 pounds of long legs and goofy smiles! Lost in midtown Tulsa, Georgie found himself a good Samaritan to charm. His old home was eventually found but unable to care for him so we were happy to welcome this handsome hunk into our program and get him ready for adoption!
In a past life, we suspect Georgie was a model, as he will often strike a pose and wait for you to notice him, and he's definitely been practicing his smile in the mirror because it's spot on. Like any dedicated model, he frequents the gym, where he's working on his muscular bod and his ability to leap into the air with all his feet off the ground. He says he's an all-natural beauty with a soft and beautiful cream-colored coat with many charcoal patches that he claims he didn't get from a salon! He hasn't let it go to his head though and is happy to ask for cuddles on the couch, let you know when he needs to out outside to potty, and he's eager to learn obedience cues and tricks.
Standing as tall as a small pony, Georgie can scale a 4-foot fence easily so he needs a more secure backyard or supervision when outside. He loves being in our yard at the shelter and will happy, and quietly, sunbathe, people watch and play with his toys for hours.
Georgie has met older children and played well with canine friends. He radiates pure joy with his big smile and is the TOTAL package for a variety of families.

Sativa is one of her foster's favorites of all time! She looks like a puppy mostly because she is less than 25 pounds and is as cute as a button! She was found as a stray in the country. Harold
Harold must have lived through many exciting adventures before we found him wandering with his friend, Frankie. He was severely underweight and had such a bad ear infection that one of his beautiful pointy ears will never stand back up. We think it gives him character though and definitely adds to his mysterious charm!
We sometimes call him Houdini because he must have used his 6 years of life to craft his escape skills! He can open gate latches with an expert flip of his nose and enjoys checking the perimeter of any fenced-in area that he's in. This guy is looking for a secure backyard and supervision outside as he settles into his new home or could do well in an apartment setting. He is currently living in a foster home and discovering all the indoor comforts that being a loved dog has to offer! He is often found lounging on the sofa or following his new human family from room to room. He is currently only being taken out on a leash because he's in an apartment, and he's doing just fine with that.
The perks of being a bit older, you don't need quite as much exercise! We believe Harold could fit easily into a variety of loving homes.
While he enjoys lounging outside, he is quiet and content when left alone in an apartment home! He doesn't seem to enjoy the company of rowdy young dogs but could likely do well with a calmer or mellow dog such as himself. He is a bit shy still so would do best in a home without children or with older ones. Even though he lived on the streets before he is such a gentleman and wouldn't ever even think of jumping on you but does still enjoy a good game of chase once he gets to know you.
At 6 years old and 54 pounds, he could stand to gain a little more weight and still has a lot of adventures left in him! Harold is looking for a forever home to help him continue his journey from street dog to spoiled companion!

Lupen is a 1-year-old who gets along great with other dogs and loves to wrestle and play. He knows how to sit and lay down. He is fearful of new people, but with the right person who is willing to be patient with him, he will be your best friend. Unfortunately, he is more fearful of men; however, once he learns to trust as he has with his foster's brother, he will reciprocate. From his foster mom: "Lupen is a complete goofball. Belly rubs are his favorite kind of love, and he’s more than happy to curl up in bed with you. If you don’t mind, he will thank you with lots of kisses and wet willies. He has lots of energy so he will do best with someone willing to play with him on a daily basis. Thelma
Little Thelma is shy and confused as to how she ended up at the shelter with her siblings. She's never lived indoors before and is finding all the noise and commotion in the shelter quite overwhelming. She sometimes hides and other times barks at everything that goes by her kennel. Thelma is a dog in need of some confidence and routine to put her on the right path to being a successful indoor companion animal! A patient, kind and relaxed human who can slowly introduce her to the big world is exactly her style.
Because of her fear, she is looking for a home without young children. She might be able to live with another friendly dog but would need a slow introduction and a safe place to call her own for the first few weeks. She would do best in a quiet home, with a secure backyard.

Pink Floyd
Here's our rocker Pink Floyd! He kind of looks like it with those cool whiskers and different colored eyes. You may have seen him listed with his sister, Willow. We found out that they actually were not bonded and do well independently! Pink Floyd's personality has really come out this past month. He really enjoys playing with the other dogs and loves running! He was born 12/19/19 so he is about 10 months old, house- and crate-trained and such a great dog. Pink Floyd is more of an independent type but will come up for a hug and pet often. He will promptly sit when told, especially when a treat is involved! My name is Boo and I’m mostly a lounge act with a playful side. I made a name for myself on the streets and found a dashing older dog during my travels. I took the initiative and tried to move in with him, unfortunately his elderly owner wasn’t in the position to take in a younger gal like myself. However, I have since learned, the elderly woman and my current foster mom were in cahoots to end my gypsy ways. Turns out I happen to fancy being a house dog and one that excludes cats. There’s just something about how they skulk around acting like they want to play, but I discovered they are all frauds. They don’t really want to play, and they get all high and mighty when I try. Talk about mixed signals!

Rocco
Rocco loves to play with everyone. He is a lover and a cuddler and has a great personality. He has high energy, loves to go on walks and is a great companion on walks. He is smart, loves his treats, frisbees, rope, balls and he will bring his favorite – a tug-o-war with rope. Rocco is 2 years old and is very low-maintenance, doesn't need/want constant attention but does love to sleep with you any chance he gets to sneak in bed. He LOVES the water and using his sniffer to find ANYTHING while out walking, hiking, shopping etc. Rocco actually prefers men first over women and he’s not much of a “in your face” right out of the gate kind of dog. He is still very leery about kids, but you can't blame him as he was abused by one previously, but does ok if they just leave him alone. Older kids would be best, but it does take him awhile to warm up to them. NO CATS because if it moves quick he goes after it. He gets along great with other dogs and he is very audible when he plays so that can take some getting used to. Rocco comes with his fair share of emotional history (don’t we all?), but he is going to be the perfect fit for that perfect someone and one of his many perks is he'll make sure you're NEVER lonely in the bathroom. Gizmo
Hi, I’m Gizmo. I am an almost 2-year-old Rat Terrier, and I weigh around 19 pounds. I had a bit of a rough start in my life, but my foster mom tells me things will only get better. I am having some trouble with my right eye. It’s either injured or infected, which may cause me to end up with a permanent wink. Can you find it in your heart to love me, even if I only have one eye? I promise it doesn’t stop me from being a sweet, pretty girl!
I do very well with other dogs. It can take me a little time to warm up, but I take cues very well and quickly figure out my place in the pack. I enjoy playing with other dogs and with squeaky toys! However, I’m not sure if I like cats. My foster mom is SUPER proud of me because I have not had one single accident in the house! I use the doggie door and do all of my business outside. I also do well in a crate — but ever since I’ve settled into my foster home, I don’t spend much time there anymore. Even when Mom leaves us dogs alone in the house for a while, I wait patiently until she returns.
My favorite pastime is cuddling, but I’m happy to faithfully sit close-by and wait for your attention. I have a good appetite, and I am quite athletic. I love spending time outside. Whenever one of my foster brothers or sisters goes out, I’m always the first to join them. Plus, my foster mom thinks I have been very helpful scaring off moles in the backyard, so I’ve been earning my keep!

Percy was one of the many dogs displaced by the flooding in Oklahoma. He now lives in the house, loves his crate and has not had one accident in the house. Markie
Meet Markie, and his story is a touch sad. He was adopted out of Tulsa Animal Welfare Shelter, but he ended up getting out of his person’s yard and when his people noticed, they didn’t care to look for him. CARE Rescue got a phone call from a nice man saying Markie was hanging out in his yard so we scooped him up and got him taken care of. Markie is 1½ years old, neutered, microchipped and up-to-date on all shots and preventative medication for fleas, parasites and heartworm.
Every encounter Markie has had has been a good one. He is BEYOND friendly, rolls over and submits to give you his belly and the kisses are almost endless! He even does that cute head-tilt when you make weird noises with your mouth. He's currently living with other dogs and gets glowing reports from his caretakers.
Markie was taken to the veterinary clinic where a healed pellet wound was discovered in his head so this boy has overcome a lot of mistreatment and hasn’t looked back or had any bad feelings about it. He just keeps moving forward. Markie will do best in a home with a 6-foot fence. Markie is available for adoption through Compassionate Animal Rescue Efforts.

Bruno
Bruno is about a year old. He is very sweet and does well with other dogs, cats and kids.
Bruno’s adoption fee is $125, which includes his neuter, up-to-date vaccinations and microchip.

Buddy
This dapper gent is Buddy, a 7-year-old Staffordshire Terrier/Boston Terrier mix. He is friendly to people and other dogs but likes to chase cats. Buddy is almost deaf and needs an understanding family who can help him with the anxiety hearing loss can cause. Even though he's friendly with dogs, he is protective of food. Buddy is looking for a home where he can be the only dog or where he can be fed separately.
