For this week’s recipe I was inspired by an easy recipe that I ate while visiting in Albuquerque, New Mexico. This past Friday should have been my son Logan’s graduation from Physical Therapy school. He finished school and all of his rotations, but like lots of events this year COVID 19 kept the graduation from taking place. We celebrated with Logan and his wife anyway at their home. During our visit his wife Holly (who grew up in New Mexico) showed me her secret to a quick and easy way to make an enchilada casserole. The recipe is below with a quick version or an easy, almost as quick version. Of course, we were in New Mexico, so we enjoyed ours with real green chili sauce mild and hot! At restaurants in Albuquerque you can enjoy most dishes with red chili, green chili, or what the locals refer to as Christmas chili (mixture of red and green).

Like the previous Kids Cooking Recipes you can watch the video that will be posted this Friday for the easy to follow directions. What could be better than a Mexican meal you can make at home!

Easy Cheater Enchiladas

Makes 6-8 servings

Ingredients:

18 Large frozen beef or chicken Taquitos (made with flour tortillas)

1 can of your favorite enchilada sauce (10 oz.) (Use red or green)

1 1/2 to 2 cups shredded Cheddar or Taco Style cheese

Directions:

1. Preheat oven to 350 degrees.

2. Spray a 9 x 12 baking dish with non-stick spray.

3. Layer dish with taquitos. Pour enchilada sauce over taquitos and sprinkle with cheese.

4. Bake for 15 to 20 minutes or until middle is hot and cheese is bubbly.

5. Let dish sit for 10 minutes before serving.

6. Serve with shredded lettuce and sour cream. Add Mexican Rice, refried beans, and chips and salsa for a tasty Mexican family meal!

Easy Beef Enchiladas

Makes 6-8 servings

Ingredients:

1 lb. ground beef cooked

1 can (10 oz.) red or green

enchilada sauce

2 cups Mexican or Taco

cheese shredded

10-12 flour tortillas 

Directions:

1. Heat oven to 375 degrees.

2. Spray a 9 x 13 baking dish with cooking spray.

3. Mix cooked ground beef with 3/4 cup enchilada sauce and 1 cup of cheese.

4. Spoon approximately 1/4 cup filling into each tortilla, roll up and place seam side down into baking dish.

5. Pour remaining sauce over rolled tortillas.

6. Sprinkle with remaining cheese.

7. Bake for 25 to 30 minutes or until cheese is melted.

8. Serve with shredded lettuce and sour cream. Add Mexican Rice, refried beans, and chips and salsa for a tasty family meal! 

NOTE: For Chicken Enchiladas: Replace beef with 4 cups cooked chicken, shredded or chopped.

We Review the Ardent FX, the "Easy-Bake Oven for Cannabis" | Westword - Westword

Cannabis legalization has brought forth several interesting at-home gadgets to enjoy the plant in concentrated or edible forms, but something presented as "the Easy-Bake Oven for cannabis" plays on both weed intrigue and nostalgia.

With precision heaters and timed cycles specifically tailored to decarboxylate and infuse food with THC, CBD and other cannabinoids, the Ardent FX attempts to take the guesswork out of making edibles and tinctures at home. Created by Boston attorney Shanel Lindsay, the FX decarboxylates (the process of heating cannabis to activate the cannabinoids before infusion) and infuses up to one ounce of flower or concentrate into butter and oils, but the machine doesn't stop there: After infusion, the FX undergoes a "bake" cycle, which actually cooks and bakes infused goodies inside of the same device.

As someone who has screwed up countless batches of edibles and never got that Easy-Bake oven on my Christmas list, I was excited to give it a try to see how smooth and effortless the FX really was. Retailing for $350 online, it's pricier than most other cannabutter and oil infusion devices on the market, but Ardent also promises more.

What struck me upon opening my FX package was how different the machine, presented in a sleek purple cylinder, looked from what I expected. Anyone unfamiliar with photos of the FX wouldn't have an idea about what the machine does — and that seems to be the point. There are no pot-leaf motifs or other telling imagery on either the packaging or the actual device, and given that one of the main selling points of the FX is that it's allegedly odorless, discretion seems to be one of Ardent's top priorities.

There's no minimum amount of material needed to use the FX, so I started with a quarter-ounce of Mystery #98 flower, a high-CBD cannabis strain. Activation of the cannabinoids lasted anywhere from one hour and 45 minutes to just over two hours, including pre-heating and cool-down time. I quickly noticed that the top would not stay firmly attached during the process. As condensation was released from the plant material, it continuously pushed the lid up, releasing some of the trapped odor.

The FX power button started flashing, meaning the activation cycle was complete and cool-down had started after just under one hour, and cooling down took about 45 minutes. Even after cooling down, the machine was very hot, so don't skip the cool-down period or rush the machine. After adding about a cup and a half of olive oil to my decarbed bud (noticeably different in color and smell, indicating a successful activation), I began the infusion cycle.

The infusion cycle lasts almost three hours, but Ardent's tests have shown that the potency of the infusion will be the same whether the cycle runs for one hour or two hours, so three just seemed unnecessarily long to me. Ardent's advice is that the length of the infusion cycle is up to us, but suggests running it for at least 45 minutes and a maximum of one complete cycle. To be safe, I let it run for 90 minutes before shutting it off manually and removing the lid to cool the contents faster.

My first impression was that the Ardent FX is a very cool gadget, and virtually foolproof if you read and follow the instructions carefully. However, users should realize that it's in no way an instant process. Making an infusion will take two to three hours, not including straining. But without having to check on it, stir, or adjust the temperature, you don't have to be actively engaged.

Ardent also infuses with cannabis concentrate, enabling more potent edibles. The length of the cycles will change based on the type of the material used, but I wasn't expecting it to take so much longer with the concentrate than it did with the flower. For my 1.5 grams of shatter, the decarb cycle took 90 minutes, but the cool-down period seemed endless. After waiting over an hour for the device to cool down, I decided to shut it off manually and open the lid to speed up the cooling. (It was already plenty cool, and I felt a little silly for having waited so long, but Ardent suggests only ending the infusion cycles manually, so I was hesitant to shut it off during an activation cycle.)

The Ardent instruction guide (emailed once your device is registered) mentions that the THC activation cycle's high temperature actually works better than the infusion cycle to infuse kief or concentrates into oil. So instead of going through the infusion cycle the next time, I decided to put the decarbed shatter and a few scoops of coconut oil back into the FX and run another activation cycle for thirty minutes (Ardent's suggested time). I was skeptical, but it did the trick in half the time. The shatter was fully melted and incorporated into the coconut oil, and the result tasted surprisingly good.

Now that I had made my oils successfully, I wanted to try the alluring bake cycle. The bake cycle uses the highest temperature, running at over 300 degrees Fahrenheit for a little over two hours. Unsure what the Ardent FX was capable of cooking, I looked at the company's online recipe guide and found recipes for cakes, pastas, sauces, rice, oatmeal, pies and more. But as I perused the recipes, I realized that just because I can make anything in the Ardent FX doesn't mean that I should. If using it to cook pasta, for example, it would take an hour and fifteen minutes. Personally, I would rather just boil my pasta on the stove and then toss it in infused oil.

I also noticed that most of the recipes instruct you to use the machine's activation cycle to bake or cook, leaving me wondering why they even bothered with the bake cycle. According to Ardent, some recipes do require the bake setting, but some recipes still use an activation setting to cook more efficiently. Additionally, their recipes are designed for both the FX and the cheaper Ardent Nova device, a decarbing machine that doesn't have the baking function. The bake setting is recommended in particular for baked goods, pastas, and sous-vide meats, but most of the recipes can be made with either Ardent device.

I picked Ardent's High 5 Chocolate Birthday Cake recipe to test out the FX's cooking and baking capabilities, but rather than going through their instructions on how to make the exact amount of canna oil needed for the recipe, I just used the infused coconut oil I had already made (which was much more potent than their suggested amount). This recipe called for using an activation setting rather than the bake setting, so that's what I did. After three hours with no sign of cool-down in sight, I had to shut the device off (Ardent warns that no cycle should last more than three hours).

The result was a weird, dense little cake. It wasn't unpleasant, and was surprisingly moist for something that baked for three hours. However, I would probably just use my oven to bake next time and stick to using the FX for activation and infusion. Anyone who's eaten a cupcake cooked under a lightbulb in a real Easy-Bake Oven has probably had a similar revelation.

I could see the Ardent FX being a good option for home growers trying to efficiently preserve a harvest, or anyone looking to make infused cooking oils in bulk. A $350 price tag is definitely an investment, but if you're frequently wasting money on low-dose edibles from the dispensary, it saves money in the long run. Being able to infuse such a large amount brings a lot of potential to the table, but I personally don't want to wait hours for only a small quantity of infused butter or oil. I also think calling it a "portable" cannabis kitchen is a bit misleading: The FX is compact and lightweight, with a handy carrying case, but it needs to be plugged into an outlet and operate at room temperature, so it's not the type of gadget you could take camping or on the road.

What I love most about the FX is the convenience. Having one device to activate and infuse, even if not used for baking, cuts out so many annoying dishes and eliminates transfer waste. The FX is also dishwasher safe, so the cleanup is even more quick and simple. Though some odor is released when condensation pushes the FX lid up, the process is relatively odorless compared to traditional activation and infusion methods, which stink up most of the house.

Even though the FX isn't instantaneous, it still whips up infusions faster than most traditional methods. Plus, the machine is pretty much guaranteed to work whether you know what you're doing or not, so no need to worry about wasting time or good weed on something that may not turn out a usable product — a risk many new cannabis cookers fall prey to. While I wouldn't call the FX a must-have for casual cannabis consumers, it's worth the investment for anyone who wants to make infusions at home.

No matter what your financial goal is, chances are that saving money is the foundation to achieving it. Without savings, it doesn't matter how well you plan or invest. But if saving is so important, why do so many people neglect to save enough?

I suspect one of the main reasons is that we tend to view saving the same way we see dieting: as a painful form of deprivation. Another reason is that we think that small savings just won't make much of a difference. Fortunately, there are relatively painless ways to save more that could make a big difference:

1. Insurance. Forget about 15 minutes saving you 15% on your car insurance. According to a Nerdwallet study, the average American can save 47% or $859 a year (about $70 a month) just by shopping around for lower cost auto insurance. This doesn't include the myriad of other ways you can save on insurance by increasing deductibles, eliminating unnecessary coverage, bundling from the same carrier, and looking for other discounts.

Savings: $70 or more a month

2. Cell Phone. Research has found that the average person spends about $100 a month on their cell phone plan and about half of Americans with unlimited cell phone plans use less than 10 GB of data per month and could save over $268 a year by switching to a plan with capped data. Many people don't realize that there are also now a host of small, pre-paid cell phone carriers that provide service from the big four networks at much lower prices. For example, I have a pre-paid plan with Verizon VZ that costs me $25 a month for unlimited talk and text and 5 GB of data on what has been called the network with the best coverage in the most places in the US.

3. Fitness. The average gym membership is about $58 per month and over 60% of memberships go unused. I'm not suggesting that you don't work out. After all, fitness has both health and financial benefits too.

Instead, consider joining the trend of working out at home, which you may have been doing anyway due to the pandemic. You might even find you’re more likely to work out if you didn't have to "go" to the gym. There are plenty of free workout sites and you can also get any equipment you need (like space-saving adjustable dumbbells) pretty cheap (and often barely used) on sites like Craig's List.

Savings: $58 per month

4. TV. It’s been estimated that people save $85-115 a month by cutting the cable cord. Figure out if you really watch all the channels you pay for and if not, consider downgrading to a cheaper package. You can always upgrade again if you change your mind. With services like Netflix NFLX ($9 per month), Hulu ($6 per month), and Sling TV ($30 per month), it's easier than ever to take a step further and cut that cable altogether, even if you like to watch live sports. With the one-time expense of a good HD antenna, you can also get over-the-air local TV stations for free . 

Savings: $85-115 per month

5. Checking Accounts. Monthly maintenance fees for basic checking accounts at the biggest US banks are typically $10-12 per month. The good news is that free checking accounts are actually easy to find if you know where to look. In particular, some free "reward checking accounts," will also reimburse you for ATM fees you're charged and even pay interest rates up to over 4% if you're willing to jump through some hoops to qualify.

Savings: $10-12 per month plus extra interest

6. Other Bills. You don't always need to change your services to reduce their cost. If you're happy with the services you're paying for, see if you can negotiate down what you're paying for them. If you're just not a negotiator, there are services like BillCutterz and BillFixers that will search for discounts on your existing services and try to negotiate down your rates without changing your service. The latter claims to save the average customer $350 per year. They generally only charge you half of whatever they save you so you can give it a try at no risk...or try negotiating yourself and keep all the savings.

Savings: $29 per month

Total Savings = $274 or more per month

To see the real impact of these savings, let's take a look at three different scenarios. In one, you're trying to pay down the average American household's credit card balance of over $6k at an average APR of about 20%. In the second, you're putting money away in a savings account for emergencies. In the third, you're saving in a tax-free Roth IRA for a retirement that's 30 years away and earning an average annualized real return of 5% on your investments. Here's what re-directing $274 per month could mean for you in each scenario: 

Applied to credit card debt as extra payments  = debt-free in a year and over $700 in interest saved

Applied to savings for emergencies = over $16k in  savings in 5 years

Applied to a Roth IRA for retirement = over $218k (in today's dollars) extra for retirement

What did you deprive yourself of to achieve those savings? You're still fully insured, enjoying your cell phone on a strong network, exercising probably more than you did before, enjoying your favorite TV shows, avoiding annoying bank fees, and paying lower bills. You didn't have to bring lunch to work, clip coupons, or turn your thermostat down. You didn't even have to give up your morning latte.

Of course, your situation or goals may require further savings. (You may even decide to cut out that latte once in a while.) But why not start with the easy stuff?

We’ve all heard and read the endless loop of “This is a semester like no other.” Now that we’ve made it through the first couple of days of classes, we at the Clog are slowly starting to adjust to the pattern of online classes. The main thing we’ve noticed is that we’re trading out that speed walk across campus in between classes for a lap around the house or apartment that somehow always seems to land us in the kitchen — even if we’re not at all hungry. And the times when we are hungry always seem to be exactly when we don’t have enough time to get a snack together. Because of this, we decided to compile this list of ideas for easy and healthy snacks to eat between your online classes.

For when you want something classic

There’s a reason things such as carrots and hummus, apples and peanut butter, cheese and crackers, chips and salsa, and yogurt and granola have become quintessential snack combos: They’re so easy to put together. Even if these classic combos seem almost too intuitive, it’s always good to remind ourselves of them so that we remember that we don’t always need to find the most innovative snack.

For when you need something quick

Maybe you don’t have the time to put two separate things together, and you just need something you can grab a handful of. This is where snacks such as trail mix, dried fruit and protein bars come in. If you really feel like eating but aren’t even hungry, we recommend opting for a piece of fruit or a serving of veggies, something relatively low-calorie that won’t fill you up.

For when you’re feeling creative

Maybe it’s overhyped on social media, and maybe you end up paying way too much for it at trendy cafes, but the power of toast can never be underestimated because there are so many possibilities. Try making some classic combos — avocado toast and peanut butter and banana toast never get old for us. For some less mainstream combos, try brie or another type of cheese with honey or jam. If you’re really feeling adventurous, make your toast on a sweet potato instead. Simply scrub the potato, cut it lengthwise into slices that are 1⁄3 to ¼-inch thick, throw those in the toaster and top them like you would a slice of bread.

For when you have a little more time

Say you have a one-hour break in between your classes. This is when you can let your creativity shine through a little more and put some more effort into your snacks. Try making a smoothie with some unconventional ingredients, toss together a simple salad, try out these frozen Greek yogurt bars or throw together some refreshing spring rolls.

In this unconventional semester, taking the time to properly fuel your body is more important than ever. Hopefully, these simple and healthy snack ideas will help you make the most of your breaks between online classes!

Ideas Are Easy, Commitment Is Not: How To Lead Change With Buy-In - Forbes

The world is full of possibilities. Senior leaders, more than most people, can see those possibilities as opportunities due to their experience and the breadth of visibility inherent in their roles.

You may be tempted to grab one of those opportunities and decide that you and your organization should go for it.

If so, you enthusiastically tell your team about it and task them with creating project plans to accomplish it.

Then you might see a little activity, such as scheduled meetings or emails on the topic. But somehow, the idea never entirely comes to fruition.

Why not?

Recommended For You

It’s often not the merit of the idea itself, or even the capability of the team.

Instead, the idea isn’t implemented because a step was missing in the run-up to the execution.

That step? You need to create awareness about the need to change.

Your team needs to not only acquire awareness about the idea, but awareness about the necessity of the change. 

“Our research has shown that 70% of all organizational change efforts fail,” said John Kotter, Harvard Business School professor and best-selling author, “and one reason for this is executives simply don’t get enough buy-in, from enough people, for their initiatives and ideas.”

Buy-in doesn’t mean they’ll do it; it means that they are committed to making it happen.

But how can you get a commitment to a new idea?

New ideas, new projects, new initiatives, these all require new behaviors. So, first, recognize that it’s hard to change behavior in any case.  Also, that it’s beyond hard, it’s almost impossible if your employees don’t embrace two concepts about the change.

•      They must understand both that things can be different – the possibility - and this understanding occurs when your vision becomes their vision of what’s possible.

•      They must also understand, beyond just an intriguing possibility, that the future needs to different. Put another way, that it’s in their (perceived) best self-interest to make it different. Although we can act against our self-interest (e.g., unhealthy habits such as smoking), if we perceive something is good for us, we’ll work hard to make it happen. If there’s a benefit for our community (our team, our company), there’s extra motivation to achieve it.

As author and teacher Mark Murphy said in a recent article, “One of the biggest obstacles in getting folks to move with the change into the future state (where you want them to be) is that the present state is usually fairly comfortable. This comfort is why, ironically, it’s often easier to lead a change management effort in a failing company than in a successful one. In successful companies, employees will often say, "Why do we need to change if we’ve been so successful thus far?"

As a leader, your role is to help your organization understand that there is no such thing as a steady-state, that there is only growth or decline. That being successful today does not equate to success tomorrow. That things change over time - even if (however unlikely) nothing at your organization changes - your customers and your competition are changing. And you’ll need to change as well to avoid decline or, better yet, to grow.

“What does this mean to me?” is the question that humans ask whenever confronted with change. Successful change leaders will help the people in their organizations answer this question before moving into the execution of a new opportunity.

You can help by exploring two ideas with your staff. First, examine the impacts of not changing. And then discuss, transparently, how the new initiative will impact them – both in positive ways and potentially in negative ones. Help them uncover any hidden fears that are often present in people who’ve been negatively impacted before by new projects. Then, you can address those concerns and strengthen the expected positive impacts.

Yes, this takes time. It’s quicker to move into execution. But if you take the time to create awareness about the necessity to change, you’ll increase your odds of success. And if you want to move up and to the right, you need more than a team executing your ideas. You need a team executing theirs.

One of the best tools we have available to us here at 4for4 is our aFPA (adjusted Fantasy Points Allowed) Tool, and it can be incredibly helpful for figuring out which players are going to have some easy matchups to begin the season. By ensuring a solid start to the year beginning 3-1 or 4-0, we can vastly increase our odds to make it to the fantasy promise land in the cold months of winter; the playoffs. What better way to kick things off than by being forward-thinking and digging into easy matchups before we even begin the draft, as opposed to the normal fantasy manager who won’t even consider them until they are setting their lineups on Sunday morning.

Below I will be picking out some players who have particularly “easy” schedules in the first month of the season who we might boost up our draft boards a few spots because of their likelihood to produce early.

Quarterbacks

2019’s Fantasy MVP starts off the 2020 season against four very giving defenses and a possible high-scoring tilt with the Kansas City Chiefs, doesn’t seem fair, does it?

The worry with Jackson is the impending touchdown regression that is sure to hit at some point during this season. His 9.0% touchdown rate from last year is completely unsustainable and is likely an aberration due to the lack of passing attempts, not to mention the team’s 35% touchdown rate per offensive drive is bound to come down as well. The first month-plus of the season should look a lot like last year but once the tougher defenses start rolling in things may not be as pretty.

Running Backs

As any grizzled veteran in the fantasy football streets is well aware of, White is a PPR monster and derives a majority of his usefulness from his efficiency in the passing game. Standard league scoring mavens ought to keep scrolling.

The typically robust New England backfield depth chart is in (relative) turmoil at the moment, with the Patriots having to go out and sign free agent Lamar Miller amidst questions about Sony Michel’s foot, Damien Harris’ NFL talent, and the opt-out of Brandon Bolden. The only sure thing they’ve got going for them is a running back who has received 218 targets over the last two seasons. Tom Brady has moved south to Tampa Bay but let us not forget that Cam Newton was the quarterback who helped create one Christian McCaffrey.

If one of Michel, Harris, or Miller doesn’t emerge right away, White could also be in line for some extra carries early in the season against a giving group of opponents.

The Indianapolis Colts not only have a great early season schedule —they don’t face a top-10 unit versus the run until Week 9 (Baltimore)— they have the best schedule in aFPA to running backs for the full season as well. Things get even sweeter when you factor in that the Colts ran the ball at the second-highest rate in neutral game script last season and new quarterback Philip Rivers’ Chargers led the league in running back touch share.

Indianapolis’ fourth-ranked offensive line will kick things off in Week 1 against a Jaguars team that allowed six different 100-yard rushers last season. Two of those 100-yard rushers came from the same game; Week 11 against Indianapolis (Marlon Mack and Jonathan Williams). An awkward offseason could make Jonathan Taylor’s ascent to lead running back more difficult than it would have been in a regular year but I’m willing to buy his fantasy upside in hopes that he gets a piece of the pie in the early going.

Wide Receivers

D.J. Chark, Jaguars

The Jacksonville Jaguars win total (via Bet MGM) is currently set at 5, among the lowest total in the NFL. The books are expecting the Jaguars to be seeing a lot of snaps while playing from behind, which is good news for Chark, who led the team with a 20.9% target share last season. After a couple of difficult match-ups against the Colts and Titans to start the year, Chark will square off against the suspect secondaries of the Dolphins, Bengals, Texans, and Lions before a Week 7 bye.

The back half of the schedule is a brutal stretch (and is a big reason why they’re expected to win less than five games), so get your Chark exposure through the first six weeks while the gettin’ is still good.

Tight Ends

Greg Olsen, Seahawks

It has never been about talent with Olsen, but as he gets up there in years, it has been about health. Olsen hasn’t played a full 16-game season since 2016. This is why having a relatively easy beginning of the season is so important if we’re going to find any fantasy value in using aging, oft-injured players. Get the good games out of the way before the body starts to break down.

The first four games on the Seattle Seahawks calendar are teams in the bottom half of aFPA, including a Week 3 game against the Cowboys who rank 28th. Because of the rotating cast of tight ends in Seattle, no one has been a target-hog in the Pacific Northwest since the days of Jimmy Graham, but a cursory glance at the type of talent that has been in-and-out of a Russel Wilson huddle at the position will help you understand why that’s the case. If Olsen can return to 80-plus target form then he will be useful in fantasy, especially in plus-matchups.

Portion Size: 1 burrito

Ingredients: Amount (Wt.):
El Milagro Tortilla, 6 inch 4 each
Eisenburg Hot Dogs 4 each
Nacho Cheese 4 TBS
Mustketch Original 4 TBS

Method of Preparation:
1. Heat the tortillas up in the microwave for 30 seconds
2. Heat the hot dog in the oven for 1 minute and 30 seconds
3. Place the hot dog in the middle of the tortilla and top with 1 TBS of nacho cheese and 1 TBS of Mustketch Original

Ingredients

  • 3 strips bacon, diced
  • 2 tablespoons unsalted butter
  • 1 apple, such as Granny Smith, diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 (8-ounce) wheel Brie cheese
  • Toasted and sliced baguette, crackers and/or apple slices, for serving

Heat the oven to 325 degrees. Line a baking sheet with parchment paper.

In a medium skillet, cook the bacon over medium heat until brown and crisp, about 8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Pour the rendered bacon fat into a bowl and save for another use.

Melt the butter in the now-empty skillet over medium heat. When the butter is foamy, add the apples and cook, stirring, for 2 minutes. Stir in the brown sugar, cinnamon and salt, and continue to cook until the apples are tender, about 2 more minutes. Remove from the heat. 

Slice the rind off the top of the Brie and place on the prepared baking sheet. Bake until the cheese is very soft, 8 to 10 minutes.

Slide the baked Brie onto a serving dish and top with the apple mixture, followed by the bacon. Surround with baguette slices, crackers and/or apples, and serve immediately.
